About: The Caballero family are legendary in Honduras. For generations, they have produced exceptional coffee around the town of Marcala in La Paz, western Honduras, near the border with El Salvador.
It is no understatement to say Fabio Caballero Jr has coffee in his blood. A fifth-generation producer, he is already demonstrating the depth of skill and focus that has defined the Caballero name for decades.
After graduating from university, Fabio began managing several of his family’s farms and, in 2019, founded Finca La Salvaje with his grandfather, Don Fabio Caballero, winner of the 2018 Honduras Cup of Excellence. La Salvaje is planted with Geisha and Java, grown from seed sourced from the family’s Cup of Excellence-winning farm, Finca San Francisco.
The name La Salvaje, meaning “wild” in Spanish, reflects the untamed environment in which the coffee is grown, rich with birdlife, native flora, and natural shade. This coffee was the highest-scoring lot in the 2025 Honduras Cup of Excellence, earning 91.59 points, placing first in the Exotic category, and achieving the highest auction price at USD 88.40 per pound.
