About: This coffee is a blend of the production from 18 small to medium growers around Chuchumatanes, the highest non-volcanic mountain range in Central America. This blend is called "El Mirador" or "The Lookout" because every farm in this area has spectacular views. Due to the low rainfall, coffee maturation is very uniform, allowing producers to pick it when it is perfectly ripe with minimal passes. This is one of the reasons why this coffee has a pronounced yet balanced acidity and silky mouthfeel. All coffee is pulped the day it is picked and undergoes a submerged fermentation for 24 to 36 hours until the mucilage is removed. Then the coffee is dried on concrete patios or raised beds, depending on the producer. This coffee is sweet, simple, and balanced.
