La Cereza is a community wet mill, research centre, and eco-farm located in the hills above San Augustin, Huila. From here Felipe Ospina processes the coffee from surrounding farms, runs training courses, and carries out secret processing experiments. This particular coffee is the result of his research. It was inoculated with a native yeast strain isolated at La Cereza before being fermented. This method develops a completely unique and complex flavour profile. This coffee is one of a kind.
