About: Jairo Arcila is a third-generation coffee producer from Quindio, Colombia. Jairo's first job was at Colombia's second-largest exporter, working as their mill manager for over 40 years. Jairo bought his first coffee farm, Finca La Esmeralda in 1989 and has acquired additional farms, like Finca Buenos Aires where this natural process decaf Castillo is from.
Decaf coffees are generally made from washed coffees and are mild in flavour, but this offering is definitely wild! Coffee cherries were picked at peak ripeness and dried whole on raised beds. The cherries were then hulled and decaffeinated using the ethyl acetate process which is naturally derived from sugar cane. This process preserves the integrity and flavour of the coffee bean. Jairo's decaf is unlike any other decaf you've ever tried!
