Named after its caretaker, Ovidio Gomez Hernandez, the Finca Ovidio farm is special to us for a number of reasons. Not only is it one of the larger farms in the smallholder area at 4.4 hectares, it is positioned scenically on the steep slopes of Santa Barbara, where the almost vertical climb to the farm rewards you with breathtaking views of Lake Yojoa.
Where Ovidio fits into our story is after having his farm ravaged over the years, with our support and belief in his product, he has been able to replant with the sturdy Pacas varietal to improve vast sections of his land. The quality of this harvest is proof of how well his strategies are working.
We chose to showcase two of the three varietals grown on the farm. The Pacas plant, mutated from the San Ramon Bourbon, and the Catimor, a mutation of a Timor and Caturra varietal.
