About: Finca La Esperanza is located in the region of Antigua, Guatemala. This specific lot derives from a small 5 hectare plantation, planted Villa Sarchi which is the varietal of this coffee. This varietal was chosen specifically for the drier climate in Antigua and its elevation, standing at 1500 masl.
The real key for this lot was matching the right maturation and density of the cherries to the processing style. The processing was carefully conducted by Josue Morales of TG-Lab. He used a specific brix of 18 (a measure of sugar content inside the coffee cherry) and submerged the cherries themselves underwater for a longer period of time. The period took 72 hours between aerobic (with oxygen) and anaerobic (without oxygen) fermentation. A very scientific approach which has resulted in delicious tasting coffee.
