The Bourbon trees have been farmed at Hacienda Sonora for over 100 years. The varietal has spawned from one very old tree rescued from the farm. Sonora was once completely cultivated with sugarcane. It has been a long process of collecting and re-cultivating the varietal to bring it back into production. The Red Bourbon is a high quality and commercially viable varietal, grown extensively throughout Central America.
Bourbon is low yielding (small amounts of coffee cherry) and accompanied by a crisp and complex acidity. The Red Bourbon appears quite robust however it requires constant fertilisation. This is one of Diego’s favourites year to year.
