About: Nelson Rodriguez lives in the municipality of Pitalito, in the department of Huila. Pitalito is famous in Colombia for being one of the most consistent areas of production for high quality speciality coffee. Its rich biodiversity, countless natural water sources, and beautiful mountain ranges create the perfect microclimate for coffee production. Nelson uses a staggered fermentation method to increase flavour complexity. He does three different pickings with the first fermented for 72 hours, the second for 48 hours, and the third for 24 hours, after which he blends them all together to create the final lot. What a treat!
